This Cilantro Lime Cauliflower Rice is a delicious alternative to regular cauliflower rice that can be ready in just 10 minutes! Whether you're eating low-carb, Paleo, Whole30, vegan or just grain-free, this nutritious side dish will be a hit.

Ingredients
  • 2 lbs riced cauliflower
  • 1/2 cup cilantro, chopped
  • 1/4 cup avocado oil (or other mild or flavorless oil)
  • 2 Tbsp lime juice
  • 1/2 tsp garlic, minced
  • 1/2 tsp salt
Instructions
  1. Microwave the riced cauliflower in a covered, microwave safe dish according to the directions on the package. Remove, pour into a strainer and set aside to strain.
  2. Meanwhile, chop the cilantro and mince or press the garlic.
  3. Pour the strained cauliflower rice to a large bowl. Add the cilantro, garlic, oil, lime juice and salt. Mix until well combined and serve.
  4. This is delicious served with my Slow Cooker Thai Peanut Chicken!
