Ingredients
  • 1 head cauliflower, cut into florets or 1 lb bag of frozen cauliflower florets
  • 2 Tbsp butter use dairy-free butter alternative or non-hydrogenated shortening for the Paleo/Whole30 version. See helpful Hints, Tips & Ingredients
  • 2 Tbsp mayonnaise see Helpful Hints, Tips & Ingredients section above for Paleo and Whole30 options
  • 1/4 tsp salt
  • 4-6 slices bacon, or about 8 ounces see Helpful Hints, Tips & Ingredients section above for Whole30 and Paleo options
  • 2 1/2 cups lacinato kale, chopped a.k.a. black cabbage or dino kale
  • 1 leek finely chopped
  • scallion for garnish slivered
Instructions
  1. Heat a pan over medium heat.
  2. Chop the bacon into 1/2 inch pieces. Cook until the fat is rendered and the bacon is crispy. Remove with a slotted spoon and set aside. Reserve about two tablespoons of the cooked bacon for garnish, if desired. Keep the bacon fat for cooking the leek and kale.
  3. While the bacon cooks, cook the cauliflower florets either by steaming on the stovetop or in the microwave. When the cauliflower is done cooking, add it to a blender or food processor along with the butter or non-hydrogenated shortening. Let it melt for a few minutes before adding the mayo and salt. Blend until smooth, stopping to scrape the sides down as needed.
  4. While the bacon finishes cooking, chop the leek finely and the kale into 1/2 inch slices. After you have finished cooking the bacon and removed it from the pan, add the leek. Cook for 4-5 minutes or until soft. Add the kale and cook for another 1-3 minutes.
  5. Add the cooked vegetables and bacon to the mashed cauliflower and stir until incorporated. Garnish with cooked bacon and slivered scallions, if desired. Serve with corned beef, lamb or another Irish entree.
